SUMMER that´s a word we´ve all being looking forward to! Right? It´s the Season for Sun, Vacation and Barbecue (or “braai” as we say in SA). Recently we went to MacDonald´s with Luca(my 6 year old) and his little friend, Pablo.Not that this was a special event or anything because every timewe take the boys out, that´s where they want to go. Lucky us! Ha! But this day I saw something at MacDonald´s I have not seen before a.k.a. LEMON PIE SUNDAE. Ok so maybe where you live it´s been around for years, but it´s the first time I see it here in Gran Canaria (Spain)and it makes me a verrrrry happy girl! 🙂

Lemon Meringue Pie is one of my absolute favourite desserts! Well to be honest anythingwith a sweet lemon curd is A-ok to me!

I made this Lemon Pie Sundae with lemon curd that I made in the microwave in only minutes! If you saw my last post, Lemon Meringue Popcorn, you would have read about me attempting Facebook live video to show you guys how I make this. It´s so easy and only takes a few ingredients: lemon juice & rind; sugar; egg yolks & melted butter. That´s it and it´s so easy to make!

What you also need is some whipping cream (store bought works just as well); cookie crumbs (I blended mine up in my heavy duty kitchen blender) and last but surely not least, vanilla ice cream! Then all you need are some cute glasses like these or even these, and you´re good to gooooo 🙂 Can I share a secret with you? The glasses I used in this post was actually old candle holders that I bought at Ikea…. 🙂 I don´t like wasting anything and I am a true believer in recycling old products, and of coursefrugal living!

Ingredients

  • Lemon Curd - See how I make mine in the microwave in only minutes!
  • Vanilla Ice Cream
  • Whipped Cream Video recipe here or use store bought
  • Cookie Crumbs mixed with melted butter (ration: 1 cup cookie crumbs + 1/2 - 1 tablespoon melted butter)
  • Leave some cookie crumbs (without adding melted butter) to decorate the tops.

Instructions

    Assembly

  1. Add 2 - 3 tablespoons of cookie crumb mix to the bottom of the glasses
  2. Top with 2 scoops of vanilla ice cream
  3. Now add the lemon curd, and
  4. Lastly add the whipped cream and dust with the plain cookie crumbs.
