It is a fun recipe, it has “unusual” ingredients, but it tastes amazing like apple pie. So you might be asking yourself why in the world is this called, “mock apple pie”, well it has no apples in it.

This is a recipe from Ritz crackers. The crackers are what makes up these apples. This pie is made just like an apple pie, with the exception of the apples. A sweet syrup is made and the crackers are seasoned just like you would an apple pie.

Mock Apple Pie is a recipe that was just sitting (unmade) in my recipe box for a long time. It was in my Grandmother’s collection and I don’t know why I put off making this pie for so long. It was right up my alley – it’s a fun recipe, it has unusual ingredients, and it tastes amazingly like apple pie.

So you might be asking yourself why in the world is this called mock apple pie? Well, it’s because it has no apples in it.

This is a recipe from a Ritz Crackers box, and Ritz Crackers are used instead of apples. This Ritz mock apple pie is made just like a regular apple pie – you make a sweet syrup and spice the crackers just as if they are apples.

I had a lot of fun making this Ritz Cracker pie and even more fun when I took the pie to work. Everyone thought this was apple pie.

I set the pie out on the counter where all food goes, and as people got a slice, I asked them what type of pie they thought they were eating. Most everyone said apple pie.

Everyone looked so surprised when I told them it was Ritz Crackers. Then I got asked for the recipe!

Super easy to make Ritz Cracker Apple Pie!

This recipe is made with easy to find ingredients. While you don’t need any apples you do need some Ritz crackers, two unbaked pie shells, lemon juice, sugar, and spices turn into an amazing flavor that tastes just like apples.

Here’s a list of ingredients you need to make the pie:

  • Water
  • Sugar
  • Cream of tartar
  • Unbaked pie shellsor 1 package of refrigerated pie crust dough
  • Ritz Crackers
  • Lemon
  • Cinnamon
  • Nutmeg
  • Butter

How to Make Mock Apple Pie

  1. You will need to make a syrup out of lemon juice, sugar, and spices.
  2. The crackers are broken and placed into a pie shell along with some pats of butter.
  3. You will pour the syrup over the crackers and butter.
  4. Top with another unbaked pie shell.
  5. You will then bake this delicious pie.

Mock Apple Pie

You can fool everyone with this Ritz Cracker Pie, it really does taste just like apple pie.

Ingredients

  • 2 cups water
  • 2 cups sugar
  • 2 teaspoons cream of tartar
  • 2 unbaked pie shells or 1 package of refrigerated pie crust dough
  • 40 Ritz Crackers
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 2 tablespoons butter cut into small pieces

Instructions

  • Preheat oven to 350 degrees.

  • In a medium-sized saucepan combine water, sugar, and cream of tartar bring to a boil.

  • Once the syrup begins to boil, add the lemon juice and lemon zest. Stir lemon juice and zest into syrup in the mixture.

  • Reduce heat to low, and simmer for approximately 15 minutes

  • Remove syrup from the heat and cool it to room temperature.

  • Place one pie crust in a pie pan.

  • Break crackers into the pie shell.

  • Pour the syrup over the crackers.

  • Sprinkle cinnamon and nutmeg over the crackers.

  • Place the butter pieces on top of the crackers.

  • Top with pie shell with remaining pie crust.

  • Pinch together crusts and then trim off excess crust.

  • Make a couple of slits in the top of the pie so the steam can escape while cooking.

  • Bake for 30 to 35 minutes or until the pie crust is golden brown.

    My mother made this “pie” on a cookie sheet with more of a cakey crust on bottom and top and a lite lemon glaze on top. We carefully did not stir the crackers once dropped into the syrup. I think we doubled the recipe b/c I remember using 72 Ritz crackers. You had to show people the scalloped edge on the crackers to convince them that there were no apples in it.

    My husband has been going on and on about wanting a homade apple pie. So i called my mom up and started asking for her recipe, I was completely shocked when she told me about Rits mock apple pie. Can not wait to make it and let my husband try it. Im not even going to tell him what it actually is until he says somthing. What a suprise for everybody! 🙂 will update when i make it.

    Stephanie, Made this pie today and yes it taste like apple pie. Don’t know what I did wrong but you have to eat it with a spoon. I went over the recipe and some others and I was right on with ingredience. I don’t understand why its runny.

      It may have needed to cook a little longer. The way ovens sometime cycle through heat means your pie isn’t cooking at the proper temperature 100% of the time. Sometimes a little more, sometimes a little less. If the pie is still warm the sauce may thicken some during cooling.
