I’ve been a fan of Golden Milk for a while now, but I have to say that this Beet Latte might be a new favorite! I was first inspired to make my own when my good friend told me how much he loved the one fromBluestone Lane, a popular coffee shop on the East Coast.I didn’t live near one, but I still wanted to see if I could get in on this goodness.

I knew that I wanted my Beet Latte to be creamy, tangy, and slightly sweet…but that’s about it. After a few experiments (and some epic fails) in the kitchen, I finally came up with this super yummy combo and am excited to share it with you.

First, you’re going to need someBeet Powder.

Beet Powder essentially a form of concentrated Beets. Because it’s a powder, it dissolves in liquid easily and won’t leave any “chunks” in your latte (ew). An added Bonus? It’spacked with plant-based goodness! Beets are a great natural source of Iron, and can support Heart, Blood and Liver health.

I personally love to useSunfood’s Beet Powder, as it is Gluten-Free, Vegan, and Organic!

As for our other ingredients? Well, let’s see…

  • Coffee:Ilove the taste of Coffee, and think that the acidity of the Coffee helps to round out and balance the Beet flavor as well. If you’re not a fan of Coffee, you can use Hot Water instead – just see the recipe notes for some spice adjustments!
  • Cacao Powder: the combination of Beets and Chocolate may sound odd, but trust me – it works. Not only does it give the latte more depth of flavor, but it also helps to boost the creaminess factor.

  • Powdered Ginger: I’m a sucker for spice and I wanted this latte to have a “kick”. Addingjust a touch of Powdered Ginger really helps to give this Beet Latte more warmth and body.
  • Maple Syrup: Typically I don’t like sweetened lattes, but I wouldstrongly recommend the Maple Syrup here to help complement the earthiness of the Cacao Powder and Beet Powder. A little goes a long way, but you can also add more to taste too.
  • Soaked Cashews: I opted to use soaked Nutsinsteadof Nondairy Milk for this recipe. Most store-bought milks are not creamy or concentrated enough for a latte, plus they don’t froth well. I’m happy to report that this isnot the case with Cashews! They blend into a creamy, frothy, liquid that isperfectfor lattes.

Note:I realize everyone may not have access to Cashews and/or a high-speed blender, so I also tested out a few other options, which you can find in the recipe notes.

I love to enjoy this Beet Latte alongside my breakfast, but it’d also be great as an afternoon pick-me-up as well. It tastes just as delicious as it looks, so I do hope you try it out 🙂

Ingredients

  • 6 oz Brewed Hot Coffee*
  • Âź cup Cashews, soaked
  • 1 tsp Sunfood’s Beet Powder
  • ½ tbsp Cacao Powder
  • Âź – ½ tsp Powdered Ginger, depending on preference
  • 1 tsp Maple Syrup
  • Pinch of Salt

Instructions

  1. Add all ingredients to avented high-speed blender and blend (with the vent open) on the highest setting for 60 seconds. Carefully pour into a mug and enjoy!

Notes

  • Caffeine-Free Version:replace the coffee with Hot Water and increase the Beet Powder to 1 1/2 tsp, as well as the Cacao Powder to 1 tbsp.
  • Cashew Substitutions: if you have an allergy, or do not have access to Cashews, or have a lower-speed blender, substitute the Cashews for 3 tbsp Hemp Hearts! Otherwise I donot recommend using any other Nuts or Seeds. You can also replace the Cashews with 2 tbsp of a Nut or Seed butter, but the end result will not be as creamy.
  • A note on Blenders: I made this recipe in myVitamix; you will need a high-speed blender in order to completely blend the Cashews. DoNOTattempt to make this recipe if your blender does not have a vent. The hot liquid will create a seal in the container and it will be impossible to open. (ie do not use a “bullet” style machine, please!)
